Are greengrocers required to sell potatoes by named variety or can they
just be called "potato"?

I dunno mate. I just sells em!
Sounds like a question for a speciality or 'Organic' produce shop. Or
for a botanist?
Viz. What variety of oats, rice, barley, carrots, cabbage, beets,
runner beans, etc. etc. Although do agree that different varieties of
apples, especially if pre-packaged are often listed by variety.
